Tastes of French Influenced African Cuisine

Historically, African countries have been influenced by the gastronomic cultures of the colonial European nations. Following centuries of French colonial rule, different countries in Central and West African developed their own gastronomic culture. It is common for societies to adopt a different food culture from either neighboring communities or through migrations to and from far away countries.
The birth of a post-colonial African cuisine was born through the presence of Europeans on the Continent, and the migration of Africans to the Western World. As a Congolese Immigrant to the United States with Belgian and French influence, I cherish my experience with French-Congolese fusion cuisine. After all, Fufu with red beef stew is to die for!
